The honey processing method yields a fruity cup profile with a rounder acidity and complex mouthfeel compared to washed coffees, while being less water-intensive. La Bastilla's farms are certified by the Rainforest Alliance and meticulously managed to express each coffee's potential, with over 150 micro-lot coffees produced annually through careful wet and dry milling.
